1 1/2 cups cooked rice
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup unsalted butter
2 cups cooked chicken, diced
2 cups broccoli florets, blanched
1/4 cup all-purpose flour
2 cups milk
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup breadcrumbs (optional, for topping)


Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
In a large mixing bowl, combine the cooked chicken, blanched broccoli florets, and cooked rice. Spread this mixture evenly in the prepared baking dish.
In a saucepan over medium heat, melt the butter. Stir in the flour to create a roux, cooking for 1-2 minutes until golden brown.
Gradually whisk in the milk until smooth and thickened, then add the garlic powder, onion powder, salt, and pepper. Cook for another 2-3 minutes until the sauce is creamy and slightly thickened.
Remove the saucepan from heat and stir in the shredded cheddar cheese, shredded mozzarella cheese, and grated Parmesan cheese until melted and well combined.
Pour the cheese sauce evenly over the chicken, broccoli, and rice mixture in the baking dish, ensuring everything is coated.
If desired, sprinkle breadcrumbs over the top of the casserole for a crispy topping.
Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and golden brown on top.
