•Ingredients:

4 cloves garlic, minced
1 teaspoon sugar
1/2 teaspoon salt
5 large onions, thinly sliced
4 tablespoons butter
2 tablespoons olive oil

1/4 cup all-purpose flour
6 cups beef broth
1/2 cup dry white wine (optional)
1 bay leaf
4 slices of baguette or French bread
1 cup shredded Gruyère or Swiss cheese

•Instructions:

Heat butter and olive oil in a large pot over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 30-40 minutes.
Stir in minced garlic, sugar, salt, and black pepper. Cook for an additional 2-3 minutes until garlic is fragrant.
Sprinkle flour over the onion mixture and stir well to combine. Cook for 2 minutes to remove the raw flour taste.
Gradually pour in beef broth and white wine, if using, stirring constantly to prevent lumps from forming. Add bay leaf and bring the soup to a simmer. Allow to simmer for 20-30 minutes, stirring occasionally.
Meanwhile, preheat the oven to broil. Place slices of baguette on a baking sheet and toast in the oven until lightly golden.
Ladle the hot soup into oven-safe bowls. Top each bowl with a slice of toasted baguette and sprinkle generously with shredded cheese.
