•Ingredients:

1 cup shredded carrots
1/2 cup finely chopped onion
2 cloves garlic, minced
1 tablespoon soy sauce
1 package of egg roll wrappers
1 pound ground pork or chicken
2 cups shredded cabbage
1 teaspoon sesame oil
1 teaspoon grated ginger
Salt and pepper to taste
Vegetable oil for frying

•Instructions:

In a skillet over medium heat, add a tablespoon of vegetable oil. Sauté minced garlic and grated ginger until fragrant.
Add ground pork or chicken to the skillet, breaking it up with a spatula. Cook until browned and fully cooked.
Incorporate shredded cabbage, carrots, and chopped onion into the skillet. Cook until vegetables are tender-crisp, about 5-7 minutes.
Season the filling with soy sauce, sesame oil, salt, and pepper. Taste and adjust seasoning as needed. Allow the filling to cool slightly.
Place an egg roll wrapper on a clean surface, with one corner facing you. Spoon 2-3 tablespoons of filling onto the center of the wrapper.
Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll tightly towards the opposite corner. Seal the edge with a bit of water.
Heat vegetable oil in a deep skillet or pot to 350°F (175°C). Carefully place the egg rolls in the hot oil, seam side down, and fry until golden brown and crispy, about 3-4 minutes per side.
