Fluffy Potato Pillow Rolls Recipe

2 1/4 teaspoons active dry yeast
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1 cup mashed potatoes, cooled
1/4 cup warm water
4 1/2 cups all-purpose flour
1 teaspoon salt
Extra melted butter for brushing (optional)
Flaky sea salt for sprinkling (optional)


In a small bowl, combine warm water and yeast. Let it sit for 5-10 minutes until frothy.
In a large mixing bowl, combine mashed potatoes, sugar, melted butter, and eggs. Mix well.
Add the yeast mixture to the potato mixture and stir until combined.
Gradually add the flour and salt to the mixture, stirring until a soft dough forms.
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.
Once the dough has risen, punch it down and divide it into small portions, shaping each into a ball.
Place the dough balls in a greased baking dish, leaving some space between each roll. Cover and let rise again for about 30-45 minutes.
Preheat the oven to 375°F (190°C).
Optional: Brush the risen rolls with melted butter and sprinkle with flaky sea salt for extra flavor.
Bake the rolls in the preheated oven for 15-20 minutes, or until golden brown.
