Crockpot Caramelized Onion Soup

4 cups beef broth
2 cups chicken broth
5 large yellow onions, thinly sliced
2 cloves garlic, minced
1/2 cup dry white wine (optional)
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and black pepper to taste
Baguette slices
Gruyere cheese, shredded


In a large skillet over medium heat, caramelize the sliced onions in a bit of oil or butter, stirring occasionally, until golden brown, about 20-30 minutes.
Transfer the caramelized onions to a crockpot. Add minced garlic, beef broth, chicken broth, white wine (if using), Worcestershire sauce, dried thyme, salt, and black pepper. Stir to combine.
Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the flavors meld together.
