Sneaky Veggie Ragu Recipe

•Ingredients:

2 carrots, peeled and diced
2 stalks celery, diced
1 zucchini, diced
1 pound ground beef
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 can (14 ounces) crushed tomatoes
1 cup beef broth (or more as needed)
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Olive oil for sautéing

•Instructions:

Heat a drizzle of olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Remove the beef from the skillet and set aside.
In the same skillet, add a bit more olive oil if needed, then add the diced onion and garlic. Sauté until softened and fragrant, about 2-3 minutes.
Add the diced carrots, celery, zucchini, and red bell pepper to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
Return the cooked ground beef to the skillet with the sautéed vegetables. Stir in the crushed tomatoes, beef broth, tomato paste, dried oregano, and dried basil. Season with salt and pepper to taste.
Bring the mixture to a simmer, then reduce the heat to low. Cover and let the ragu simmer for at least 30 minutes to allow the flavors to meld together, stirring occasionally. Add more beef broth if needed to reach your desired consistency.
