•Ingredients:

1 large onion, thinly sliced
1 bell pepper, thinly sliced
Salt and pepper, to taste
8 slices provolone cheese, diced
1 pound thinly sliced ribeye or sirloin steak
1 tablespoon vegetable oil
8 egg roll wrappers
Vegetable oil, for frying
Optional: Sriracha or ketchup, for dipping

•Instructions:

Heat vegetable oil in a large skillet over medium-high heat.
Add the thinly sliced steak to the skillet and cook until browned, approximately 2-3 minutes per side. Set aside.
In the same skillet, add another tablespoon of oil if necessary, then add the sliced onions and bell peppers. Cook until softened and slightly caramelized, about 5-7 minutes. Season with salt and pepper to taste.
Preheat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Lay out an egg roll wrapper with one corner facing towards you.
Place a portion of the cooked steak in the center of the wrapper, followed by a spoonful of the cooked onions and peppers, and a sprinkle of diced provolone cheese.
Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll tightly towards the opposite corner, sealing the edge with a bit of water.
Repeat with the remaining egg roll wrappers and filling.
Carefully place the rolled-up egg rolls in the preheated oil and fry until golden brown, about 3-4 minutes per side.
Remove the egg rolls from the oil and drain on paper towels to remove excess oil.
Serve the crispy Philly cheesesteak roll-ups hot with sriracha or ketchup for dipping.
