Ultimate Carrot Dream Cake

1 1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
4 large eggs
1 1/2 cups granulated sugar
2 cups all-purpose flour
2 teaspoons baking powder
1 cup vegetable oil
2 teaspoons vanilla extract
3 cups grated carrots
1 cup crushed pineapple, drained
1 cup chopped walnuts or pecans (optional)

Cream Cheese Frosting:

1/2 cup unsalted butter, softened
4 cups powdered sugar
8 ounces cream cheese, softened
1 teaspoon vanilla extract


Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, beat eggs, sugar, oil, and vanilla extract until well combined.
Gradually add dry ingredients to wet ingredients, mixing until just combined.
Fold in grated carrots, crushed pineapple, and chopped nuts (if using) until evenly distributed.
Divide batter evenly between prepared cake pans.

Once cakes are completely cooled, place one layer on a serving plate or cake stand.
