Easy Mexican Taco Casserole

Indulge in the irresistible flavors of Easy Mexican Taco Casserole, a savory fusion of seasoned ground beef, black beans, corn, salsa, and gooey melted cheese layered between corn tortillas. •Ingredients:

1 packet taco seasoning mix
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 jar (16 ounces) salsa
1 cup shredded cheddar cheese
1 pound ground beef
1 cup shredded Monterey Jack cheese
12 corn tortillas
Optional toppings: chopped tomatoes, sliced olives, diced avocado, sour cream, chopped cilantro

•Instructions:

Preheat oven to 375°F (190°C).
In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess fat.
Stir in taco seasoning mix, black beans, corn, and salsa. Simmer for 5 minutes, stirring occasionally.
Spread a thin layer of the meat mixture in a 9×13 inch baking dish.
Place 4 corn tortillas over the meat mixture, overlapping if needed.
Spread a layer of the meat mixture over tortillas, followed by a sprinkle of both cheeses.
Repeat layers until all ingredients are used, finishing with a layer of cheese on top.
Cover baking dish with foil and bake for 25-30 minutes, until cheese is melted and bubbly.
Let cool for a few minutes before serving.
Serve with optional toppings as desired.
