Grilled Herb-Roasted Potato Foil Packets

Savor the flavors of summer with our Grilled Herb-Roasted Potato Foil Packets recipe. Thinly sliced potatoes, onions, and garlic, tossed in olive oil and herbs, then sealed in foil packets and grilled to perfection. A simple and delicious side dish for any outdoor gathering.


2 cloves garlic, minced
2 large potatoes, thinly sliced
1 small onion, thinly sliced
2 tablespoons olive oil
Salt and pepper to taste
Optional: fresh herbs such as rosemary, thyme, or parsley


Preheat your grill to medium heat or oven to 400°F (200°C).
In a large bowl, combine the thinly sliced potatoes, onion, minced garlic, olive oil, salt, pepper, and any desired fresh herbs. Toss until evenly coated.
Tear off four pieces of heavy-duty aluminum foil, each about 12 inches long.
Divide the potato mixture evenly among the foil pieces, placing it in the center.
Fold the foil over the potatoes, sealing the edges tightly to create packets.
If using a grill, place the foil packets directly on the grill grates. If using an oven, place the packets on a baking sheet.
Grill or bake the packets for 20-25 minutes, or until the potatoes are tender and cooked through.
