•Ingredients:

1/2 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup white rice
4 cups whole milk
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
Raisins (optional)

•Instructions:

Preheat the oven to 300°F (150°C).
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice, milk, sugar, and salt. Bring to a simmer over medium heat, stirring occasionally.
Once simmering, reduce the heat to low and cook uncovered, stirring occasionally, for about 25-30 minutes, until the rice is tender and the mixture has thickened. Avoid boiling over.
Remove the saucepan from the heat and stir in the vanilla extract and optional spices, if using.
If desired, add raisins into the pudding mixture.
Pour the mixture into a greased baking dish.
Bake in the preheated oven for approximately 1 to 1 1/2 hours, until the top is golden brown and the pudding is set.
Let the pudding cool slightly before serving. Enjoy warm or chilled!
