For the crust:
1/2 cup melted butter
2 cups graham cracker crumbs

1 1/4 cups granulated sugar
1 teaspoon vanilla extract
4 large eggs
4 (8-ounce) packages cream cheese, softened
For the strawberry topping:
1/2 cup granulated sugar
2 cups fresh strawberries, hulled and sliced
1 tablespoon lemon juice

•Instructions:

Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture onto the bottom of the prepared pan to form the crust.
Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.
In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.
Add the eggs, one at a time, beating well after each addition until fully incorporated.
Pour the filling over the cooled crust, spreading it evenly.

While the cheesecake is cooling, prepare the strawberry topping. In a saucepan, combine the sliced strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries are soft and the mixture is thickened, about 10-15 minutes.
