Cheesy Chicken and Broccoli Bake

1 ½ cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup milk
½ cup chicken broth
2 cups cooked chicken, diced
2 cups broccoli florets, steamed
2 tablespoons all-purpose flour
2 tablespoons unsalted butter
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
2 cups cooked rice (optional)


Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
In a medium saucepan, melt the butter over medium heat. Add the flour and whisk constantly for 1-2 minutes until smooth and bubbly.
Slowly pour in the milk and chicken broth, whisking continuously until the mixture is smooth and thickened.
Stir in the garlic powder, onion powder, salt, and pepper.
Remove the saucepan from the heat and add 1 cup of cheddar cheese and ½ cup of mozzarella cheese. Stir until the cheese is melted and the sauce is creamy.
In the prepared baking dish, spread half of the cooked chicken and broccoli evenly.
Pour half of the cheese sauce over the chicken and broccoli layer.
Repeat with the remaining chicken, broccoli, and cheese sauce.
Sprinkle the remaining ½ cup of cheddar cheese and ½ cup of mozzarella cheese over the top.
Cover the dish with foil and bake in the preheated oven for 20 minutes.
