•Ingredients:

4 cups coarse sea salt
4 cloves garlic, minced
4 large russet potatoes, scrubbed clean
4 sprigs fresh rosemary
4 sprigs fresh thyme
Olive oil, for brushing
Toppings of your choice: sour cream, chopped chives, grated cheese, crispy bacon bits

•Instructions:

Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the coarse sea salt with the minced garlic, fresh rosemary, and fresh thyme.
Pour a layer of the salt mixture into the bottom of a baking dish, creating a bed for the potatoes to rest on.
Pierce each potato several times with a fork or knife.
Brush each potato generously with olive oil, then roll them in the salt mixture until evenly coated.
Place the coated potatoes on top of the salt bed in the baking dish.
