4 cups coarse sea salt
4 cloves garlic, minced
4 large russet potatoes, scrubbed clean
4 sprigs fresh rosemary
4 sprigs fresh thyme
Olive oil, for brushing
Toppings of your choice: sour cream, chopped chives, grated cheese, crispy bacon bits

Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the coarse sea salt with the minced garlic, fresh rosemary, and fresh thyme.
Pour a layer of the salt mixture into the bottom of a baking dish, creating a bed for the potatoes to rest on.
Pierce each potato several times with a fork or knife.
Brush each potato generously with olive oil, then roll them in the salt mixture until evenly coated.
Place the coated potatoes on top of the salt bed in the baking dish.
Bake the potatoes in the preheated oven for about 1 hour, or until they are tender when pierced with a fork.
Once baked, remove the potatoes from the oven and let them cool for a few minutes.
Carefully brush off any excess salt from the potatoes.
